These easy apple butter donut muffins are full of apple flavor! Dipped in melted butter, then rolled into a cinnamon sugar mixture. Made with your favorite pancake mix. Be sure to make a double batch, these will disappear fast!

Apple Butter Donut Muffins
After making a fresh batch of homemade apple butter, I had to bake with it. My mother-in-law, gave me a box of pancake mix. I don’t normally keep it on hand, but decided to try out a recipe with it. Let’s just say… I will be keeping pancake mix on hand. We were hooked on these delicious apple butter donut muffins! We (mostly me) ate a whole batch in one day… I had to whip up another batch for pictures. Our 6 year old son, loved them!
You really get to taste the apple butter flavor in these. They were so good! The best part… they’re extremely easy to make.
Here’s what I did:
I sprayed a mini muffin pan with non-stick cooking spray. I preheated the oven to 350 F degrees. I mixed together the pancake mix, melted butter, apple butter, milk, sugar, and cinnamon. I ended up with a thick mixture, and spooned out 1 Tablespoon of batter into the prepared mini muffin pan. Baked them for 10 minutes. Once they have cooled enough to handle, I dipped them in melted butter, and into a cinnamon sugar mixture. I placed them on a wired rack to finish cooling. That’s it! Makes 24 mini donut muffins.
Apple Butter Donut Muffins – Makes 24 mini donut muffins
- 1 cup pancake mix
- 1/2 cup apple butter
- 1/4 cup melted butter
- 1/4 cup milk
- 1 Tablespoon sugar
- 1/4 teaspoon cinnamon
- 1/4 cup melted butter
- 3/4 cup sugar
- 1 teaspoon cinnamon
Step One: Preheat the oven to 350 F degrees. Spray a 24 count mini muffin pan with non-stick cooking spray. In a mixing bowl, combine the pancake mix, apple butter, melted butter, milk, sugar, and cinnamon. Mix until a thick batter forms. Spoon out 1 Tablespoon of batter into the prepared pan. Bake in the preheated oven for 10 minutes. Allow to cool.
Step Two: Prepare the topping – mix together the sugar and cinnamon in a medium bowl. Have the melted butter ready to work with. Once the donut muffins are cool enough to handle, remove them from the pan. Dip the donut muffins into the melted butter, and toss into the cinnamon sugar mixture. Place on a wired rack to finish cooling. Enjoy!
