An easy recipe for healthy no-bake peanut butter bars that are also gluten-free. A thick peanut butter layer, topped with chocolate!

Healthy No-bake Peanut Butter Bars

These bars are extremely easy to whip up, and aren’t overly sweet. They make a great gluten-free treat! I was craving a peanut butter and chocolate combo when I put this recipe together. Many recipes call for ingredients that contain gluten, so I played around with ingredients and produced this one. Our 8 year old, loves these and wanted a piece in his lunch everyday.

We also like to chop up a couple pieces to mix with vanilla ice cream, for an even sweeter treat!

Healthy No-Bake Peanut Butter Bars

{Makes one standard loaf pan}

  • 1 cup peanut butter
  • 1/4 cup sugar
  • 1 teaspoon molasses
  • 2 teaspoons coconut oil
  • 3/4  cup oat flour
  • sprinkles *optional

Topping:

  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil
  • 1 teaspoon raw honey

Step One: Place peanut butter, sugar, molasses,and coconut oil into a microwave safe bowl. Heat for about 30 – 40 seconds, or until stir-able. Stir and add oat flour to form a soft dough.

Step Two: Press dough into a parchment lined loaf pan. Chill for 10 minutes in fridge.

Step Three: Melt the dark chocolate chips and coconut oil, stir in honey. Pour & spread evenly, over the peanut butter mixture. Add sprinkles (if using) and chill in fridge until set. When ready to cut into bars, remove from the refrigerator and soften for about 10 minutes at room temperature. Use hot knife to cut clean slices. Store any remaining peanut butter bars in the refrigerator. Enjoy!

*Vegan option: Use molasses, or maple syrup, in place of honey & use vegan friendly sprinkles.
