Triple Apple Muffins

Looking for an apple packed muffin?  Well these are triple apple muffins!  Packed with 3 times the apple goodness!  Fresh apples, apple cider, and apple butter are all in one muffin.  Talk about a fall inspired muffin.  Oh, also made with white whole wheat flour.  These make great school lunch snacks, too!

I mostly needed to use up all those things.  And decided to make muffins.  If you need another way to use up your apple butter, try this delicious Honey Apple Butter Bread with Cinnamon Glaze.  That’s another good recipe.

The fall weather has hit us, here in Michigan.  It went from 80 degree weather one day, to 55 degrees the next.  It’s definitely cool outside, right now.  A nice mug of hot apple cider sounds perfect, right now.  Ok, I talked myself into it.

I must have eaten two..three of these before taking pictures.  Our son, Landon, couldn’t stop eating them!   These triple apple muffins were good without the icing on top, too.  When you add the icing to the tops, make sure it’s on the thicker side.  You don’t want a very runny icing because it will soak into the muffin.  Then you’ll have a really soggy muffin and we don’t want soggy muffins.  Nope, soggy muffins are no fun.

It’s apple season and that means it’s the perfect time to make these triple apple muffins. I was able to make 20 muffins from this recipe.  It will depend on the brand and size of your muffin tin.  You should get anywhere between 18 -20 muffins.

Triple Apple Muffins

Three times the apple flavor and made with white whole wheat.


  1. 6 Tablespoons room temperature margarine or butter
  2. 1/4 cup brown sugar
  3. 1/4 cup white sugar
  4. 1 egg
  5. 3/4 cup apple cider
  6. 1/2 cup apple butter
  7. 2 medium apples peeled and grated
  8. 1/2 teaspoon vanilla
  9. 1 teaspoon cinnamon
  10. 1/4 teaspoon nutmeg
  11. 1/4 teaspoon sea salt
  12. 1/2 teaspoon baking soda
  13. 1/2 Tablespoon baking powder
  14. 1 cup sifted pastry flour
  15. 3/4 cup white whole wheat flour


  1. 2 1/4 cups powdered sugar
  2. 1 Tablespoon corn syrup
  3. 3 Tablespoon water


  1. Preheat oven to 350 degrees F. Place cupcake liners in cupcake pan.
  2. Cream margarine/butter and sugars. Add in the egg and vanilla, mix well. Pour in the apple cider, apple butter and grated apples, mix together.
  3. Now the dry ingredients, cinnamon, nutmeg, salt, baking soda, baking powder and both flours can be added to the wet mixture. Stir until fully incorporated, don’t over mix.
  4. Pour muffin batter into lined cupcake tins about 3/4 full. Tap pans on counter to remove any air bubbles. Bake in preheated oven for 30 minutes. Once the muffins have cooled for 10
  5. minutes, tilt the muffins on their side while in the pan. This prevents the bottoms from getting soggy. Allow to fully cool.


  1. Mix all the icing ingredients together in bowl. You don’t want a runny icing. It needs to be on the thicker side. If it’s too runny add a little more powdered sugar.
  2. Once the muffins have cooled completely, spoon on icing in the center of muffin and spread to edges. Allow to set.
